Simple & Nourishing Mothers Oat Porridge

I find that I feel more peaceful and resilient throughout the day when I eat a nourishing & hearty breakfast. This is a wonderful porridge for new mothers in particular, but also anyone in the family! (My toddler absolutely loves this recipe).

Tip: Involve your significant other! A spouse or partner can help by remembering to soak the oats the night before at room temperature on the counter.

What makes this recipe special?

  • Extra healthy fats (butter or ghee)

Simple & Nourishing Mothers Oat Porridge Recipe

Serves 1-2

Ingredients

  • 1 cup old-fashioned oats (do not use instant oats or steel cut!)

  • 1 cup cow milk (raw, if possible) or milk alternative plus ~ 1/4 cup more for cooking

  • 1-2 tbsp butter or ghee

  • 1 egg yolk

  • 1 - 2 tsp Cinnamon (really how much you add is up to you)

  • 1/2 tsp Himalayan Sea Salt

  • 1-2tbsp Maple syrup or to your liking

  • Other fixings based on your own preferences:

    • Nuts like almonds or walnuts

    • Fruit - frozen or fresh - blueberries, cherries, aronia berries, whatever suits you! I personally don’t like fruit in my oatmeal though :)

    • 1 tbsp nut butter (peanut or almond is delicious!)

The Process

  1. Soak! Place 1 cup of oats in 1 cup of milk the night before and leave on the countertop at room temperature or let soak for a couple hours on the counter and then transfer to the refrigerator.  Soaking the oats aids in the digestibility & nutrition of the oats while enhancing the flavor & consistency.

  2. Warm up! In the morning, in a small sauce pan over low to medium heat add:

    • oat+milk mixture

    • Some extra milk (around 1/4 cup to 1/2 cup depending on how thick you like it, remember that some of the milk will evaporate as you cook)

    • cinnamon,

    • butter or ghee,

    • maple syrup,

    • & whatever other spices or fixings you like like fruit & nuts

  3. Add egg & enjoy! After the butter has melted and the porridge has thickened to your liking, add in the egg yolk and stir quickly until it is fully mixed in, cook for 2 more minutes. If the egg sits too long without stirring, it’ll cook together and form visible egg chunks (only a problem for aesthetics).  After mixing in the egg yolk, turn off the heat and serve! Add more maple syrup to your liking.

Enjoy this creamy golden porridge immediately or store in the refrigerator and reheat later.
